Saucy Dijon Herb Chicken

SAUCY DIJON HERB CHICKEN
Ingredients:
 
1/2 cup chicken broth
1/3 cup Dijon mustard
1/3 cup mayonnaise
1 clove garlic, minced
1 teaspoon chives, minced
4 boneless chicken breasts
1 tablespoon oil
1 tablespoon fresh parsley, minced
 
Directions:
 
  1. In a small Bowl, mix the first 5 ingredients; set aside.
  2. Season the chicken with salt and pepper.
  3. Heat the oil in a large nonstick skillet.
  4. Brown the chicken on both sides.
  5. Don't completely cook the chicken.
  6. It will finish cooking along with the sauce later.
  7. Remove the chicken from the skillet; cover and keep warm.
  8. Add the sauce mixture to the skillet.
  9. Bring to a simmer and cook over medium heat about a couple minutes or until the sauce has thickened slightly.
  10. Add the chicken to the sauce and simmer just until the chicken has finished cooking.
  11. Sprinkle with parsley.
