Homemade Onion Mushroom Quinoa


Homemade onion mushroom quinoa

Ingredients:

1 cup uncooked quinoa

1 teaspoon canola oil

1 small onion, cut into fourths, then sliced

1 medium carrot, shredded

1 small green bell pepper, chopped

1 cup sliced mushrooms

1 teaspoon chopped fresh thyme leaves

1/4 teaspoon salt

1 can veggie or chicken broth

 

Directions:

  1. Rinse quinoa thoroughly by placing in a fine mesh strainer and holding under cold water until water runs clear; drain well.
  2. In 2 quart saucepan, heat oil over medium heat.
  3. Cook quinoa and onion in oil 4 to 5 minutes; stirring occasionally, until light brown.
  4. Stir in remaining ingredients. Heat to boiling; reduce heat.
  5. Cover; simmer about 15 minutes or until liquid is absorbed.
  6. Fluff with a fork.
  7. Enjoy!
