Crab Mushroom Soup


CRAB AND MUSHROOM SOUP

Ingredients:

6 ounces fresh mushrooms, sliced
1/4 cup onion, chopped
4 tablespoons butter
4 cups chicken broth
1/4 cup dry white wine
6 ounces crab meat
1/2 cup heavy cream
2 tablespoons fresh parsley, chopped
Salt and pepper, to taste



Directions:

  1. In a large pot, sauté the mushrooms and onion in butter until tender.
  2. Remove about half of the mushrooms and set aside.
  3. Add the broth and wine to the pot; puree soup in blender or with stick blender.
  4. Bring to a simmer, then stir in the crab meat, the reserved sliced mushrooms, cream and parsley; heat through.
  5. Season to taste.
