Homemade Strawberry Mint Soup

HOMEMADE STRAWBERRY MINT SOUP
 
 
Ingredients:

2 pints fresh strawberries
2 tbsp maple syrup

18 fresh mint leaves, washed and patted dry
1/4 cup fresh orange juice

2 pints frozen strawberries
2 tbsp grated coconut

 

Directions:

  1. Reserve 4 lg. fresh strawberries. 
  2. Place remaining fresh strawberries in blender with maple syrup, 10 mint leaves, and fresh orange juice.
  3. Blend until completely smooth.
  4. Refrigerate until cold.
  5. Thinly slice the remaining fresh strawberries.
  6. Refrigerate until serving time.
  7. Run frozen strawberries through champion juicer or process with metal blade until a thick sherbet forms.
  8. To serve, ladle strawberry-mint soup into shallow bowls.
  9. Place a scoop strawberry sherbet in center.
  10. Garnish with strawberry slices and mint leaves.
  11. Sprinkle with coconut and enjoy.
