Ingredients:
2 pints fresh strawberries
2 tbsp maple syrup
18 fresh mint leaves, washed and patted dry
1/4 cup fresh orange juice
2 pints frozen strawberries
2 tbsp grated coconut
Directions:
- Reserve 4 lg. fresh strawberries.
- Place remaining fresh strawberries in blender with maple syrup, 10 mint leaves, and fresh orange juice.
- Blend until completely smooth.
- Refrigerate until cold.
- Thinly slice the remaining fresh strawberries.
- Refrigerate until serving time.
- Run frozen strawberries through champion juicer or process with metal blade until a thick sherbet forms.
- To serve, ladle strawberry-mint soup into shallow bowls.
- Place a scoop strawberry sherbet in center.
- Garnish with strawberry slices and mint leaves.
- Sprinkle with coconut and enjoy.
