Muffins
Ingredients:
2 c.
flour
1/4 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 c. grated raw carrots
3/4 c. milk
1/2 c. chopped nuts
1/4 c. oil
1 egg, beaten
1 tsp. grated orange peel

Directions:
- Into a bowl, sift together flour, sugar, baking powder and salt.
- Mix together carrot, milk, nuts, oil, egg and orange peel.
- Add carrot mixture all at once to flour mixture, stirring just until dry ingredients are moistened.
- Fill greased muffin cups 2/3 full.
- Bake at 425 degrees for 20-25 minutes.
- Place on a wire rack and allow to cool slightly before enjoying
